Double Chocolate Chip Ice Cream Sandwiches


24 chocolate chip cookies
3 cups of chocolate chip ice cream

Ingredients for Cookies
– 1 cup softened butter
– 1 cup brown sugar
– 1 cup granulated sugar
– 2 eggs
– 1 teaspoon vanilla
– 3 tablespoons of coco powder
– 2 cups flour
– 1 1/2 cup whole wheat flour
– 1 teaspoon salt
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 2 cups chocolate chips
– 1 cup white chocolate chopped finely

Directions for Cookies
1. Preheat the oven to 350 degrees

2. In a small bowl whisk together the flour, baking soda, baking powder and salt

3. In a large bowl beat together the butter and sugar with an electric mixer until pale and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce the speed to low and mix in flour mixture until just incorporated, then stir in the chips and chopped chocolate

4. Drop heaping teaspoons of dough 2 inches apart onto baking sheets

5. Bake, 1 sheet at a time, until golden, 9 to 15 minutes. Let stand 1 minute then transfer cookies to a rack to cool and continue making cookies using cooled baking sheets

To make the Ice Cream Sandwiches
– When the cookies have cooled spoon 1/4 cup of chocolate chip ice cream onto the flat side of one cookie. Top each with flat side of another cookie; press lightly. Place sandwiches on baking sheets; cover and freeze. (Can be made 1 day ahead.)
