
Sauteed zucchini and tomatoes is a quick and delicious summer side dish or tossed over pasta made with simple fresh ingredients
Ingredients
– 1 medium zucchini, cut up
– 5 medium fresh tomatoes, diced
– 1 small white onion, diced
– 5 cloves garlic, smashed with the side of a knife
– 2 tablespoons extra virgin olive oil
– 1/2 teaspoon Italian herbs
– Kosher salt and fresh pepper, to taste
– 1/4 cup fresh basi, chopped
Directions
1. In a large non-stick skillet, heat olive oil over medium-high heat
2. Add garlic, onion, and saute until golden. 1 to 2 minutes
3. Add zucchini, salt and pepper, to taste
4. Cook about 4-5 minutes on each side, add tomatoes and season with additional salt and Italian herbs
5. Lower heat and simmer about 5-10 minutes
6. Divide into 4 equal portions when serving
